I am looking for a good chili pepper(flavor profile) to use in a dessert with oranges and pineapple.?
This dessert will fairly sweet,yet I want the chili's flavor to come through but not over power the dish.
I ama former chef from Canada and have always like a Thai Chili powder I use on fruits, mostly with pineapple, mangos and melons but it is nice with strawberrys and orange/grapefruit sections. In a nice fresh fruit compote it is a crowd pleaser.
Added to a fruit salad and then when serving a bit of lightly whipped cream with lime juice and a dash of sugar or honey, makes quite an interesting dessert, just make sure to taste it as you go, they are hot but not killer hot, it is just as they rehydrate they will become more spicy.
